Vegan Gluten Free Banana Bread

  • 2 cups GF flour (we like Bob’s Red Mill 1:1 or use almond flour for a grain free option)
  • 1/2 cup monk fruit
  • 6 tbsp aquafaba (the liquid from a can of chickpeas)
  • 1/2 cup plant milk
  • 3 ripe mashed bananas
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/4 cup melted coconut oil
  • 1/2 cup walnuts (optional)


  1. To a stand mixer, add the liquid aquafaba and run the mixer until the liquid sets up to a stiff foam
  2. Add in the oil and bananas and mix until combined
  3. Add in the cinnamon, monk fruit, baking soda, baking powder, and flour and mix until well combined.
  4. Fold in the walnuts if using
  5. Preheat oven to 360 degrees
  6. Coat a loaf pan with butter or oil so the banana bread doesn’t stick and add the mixture to the loaf pan
  7. Bake for 1 hour
  8. Serve with your favorites, top with more walnuts, butter, or maple syrup and enjoy!
