Ingredients
- 2 cups GF flour (we like Bob’s Red Mill 1:1 or use almond flour for a grain free option)
- 1/2 cup monk fruit
- 6 tbsp aquafaba (the liquid from a can of chickpeas)
- 1/2 cup plant milk
- 3 ripe mashed bananas
- 1/2 tsp baking soda
- 1 tsp baking powder
- 2 tsp cinnamon
- 1/4 cup melted coconut oil
- 1/2 cup walnuts (optional)
Instructions
- To a stand mixer, add the liquid aquafaba and run the mixer until the liquid sets up to a stiff foam
- Add in the oil and bananas and mix until combined
- Add in the cinnamon, monk fruit, baking soda, baking powder, and flour and mix until well combined.
- Fold in the walnuts if using
- Preheat oven to 360 degrees
- Coat a loaf pan with butter or oil so the banana bread doesn’t stick and add the mixture to the loaf pan
- Bake for 1 hour
- Serve with your favorites, top with more walnuts, butter, or maple syrup and enjoy!
